Fall has finally arrived and with it comes all of the scrumptious fall flavors. Step aside Lemonade cause its Pumpkin spice latte season! Move over wild rice and make some room for sweet potatoes, carrots, acorn squash and wild corn! For me, the Summer months fill my plate with cool, crisp refreshing meals that are light and refreshing. Then, just as the temperature outside starts to dip, my body starts to crave warm, healthy, flavorful, fall comfort food (yes comfort food can be healthy).
One of my favorite “go to” lunch time wraps is filled with zucchini, sweet potatoes, onion, green bell pepper and corn, all drizzled with a light balsamic glaze. Just when you think it’s just another wrap…..we are going to spread a little garlic hummus for added flavor, and press it in a pan to blend all the flavors together.
Give this one a try with just veggies, but if you need a little protein, sliced grilled chicken is the way to go!
1 Organic diced zucchini
1 Organic diced green bell pepper
1/2 Organic diced white, sweet onion
1 Organic, peeled and diced sweet potato
2 cups Roasted organic sweet corn
1 cup Organic romaine lettuce
1/2 cup Organic garlic hummus
1 package large whole wheat wraps
Step 1. Peel and dice sweet potatoes. Place in a stove top pan with a little olive oil until tender.
Step 2. While the sweet potatoes are cooking, dice all remaining vegetables.
Step 3. Place all veggies into another pan and sauté until tender, but not mushy : (
Step 4. Once the sweet potatoes are done, add them to the veggies.
Step 5. Add sliced romaine lettuce.
Step 6. Add balsamic glaze, salt pepper to taste. Stir all the flavors together and simmer for about 2 minutes.
step 7. Spread hummus onto wrap, fill with vegetable mixture.
Step 8. Wrap the wrap! Press into a pan with a little butter or ghee to warm.
Once you have warmed the wrap on both sides, serve. If there are any leftovers, place in the fridge for leftover lunch the next day : )
