This is one of our family favorites, super charged with vitamins and easy to prepare. What more could you ask for! Mix it up with chicken, lean steak or no meat at all. The possibilities are endless.
3/4 tsp Himalayan Sea Salt
1/4 tsp Black Pepper
1 tbsp Coconut Oil
1/2 cup Walnuts, toasted
1 1/2 lbs Baby Beets
2 oz Goat Cheese
Balsamic Glaze (for dressing, optional)
Prepare Chicken by sprinkling salt, paper and garlic to taste. Cook chicken on grill, once cooked slice into individual proportions. Cut beets up into small bite size pieces. Heat Pan and melt coconut oil, toss beets in coconut oil and roast until tender. Add salt and pepper to taste. Once the beets are tender, place into a salad bowl. Add goat cheese crumbles and walnuts. Toss. Place salad portions onto plates, then add sliced chicken on top or for added variation try lean steak. Add balsamic glaze to taste.
